How many times have you stopped at the nearest fast food restaurant simply because it was convenient? Unless spending time in front of the hot stove is your calming therapy after a long treacherous day at work, who really wants to spend the rest of their evening doing more work. This is time that could be used reading a book, spending time with family, or just relaxing while watching Netflix.

I can’t blame anyone for taking advantage of the convenience of a fast food restaurant as I have pulled over to one those burger and fries joints also, but how healthy and satisfying was that meal really.  It may have satisfied me in that moment, but the nutrition of the meal was oh so questionable.

Eating out can get old. It really does and to be honest most of the time I want a home cooked meal. You don’t have to worry about whether you are eating 100% beef or pink paste. Don’t get me wrong there are healthier choice menu items out there, but again the monotony of it all can get boring.

“So how does one enjoy a home cooked meal when life can get so busy at times?”

Meal-Prep!

You can meal prep any type of food you desire, and it doesn’t have to be extremely healthy.  Most of the time you may see that when people meal prep its usually something healthy, but you can meal prep soulful meals also.

Let me tell you, I got my time back this week because I meal prepped. I spent a few hours getting breakfast, lunch, and dinner ready for the week Sunday evening and I’m so glad I did because I didn’t have to rush through preparing a healthy dinner after work. I haven’t gone 100% into my catering career as I am still working full time. Usually, when I get off my full time job, I have to go right into LeanBack work and squeeze in something for us to eat. Preparing these meals gave me so much of my time back. All I had to do was warm the food in the microwave.

This past week I prepared meals so delicious I could not wait to eat.  For a lunch meal option, I did a loaded seafood baked potato. For dinner I prepared smoked meatballs, garlic parmesan cauliflower rice, and roasted broccoli and also garlic butter chicken paired with zucchini noodles. For breakfast I did a scramble loaded with veggies. My husband and I have an ultimate goal to lose weight, so I made sure I prepared meals that would promote that goal.

What are the steps?

  1. On Friday, I came up with my menu and then went grocery shopping. I bought a weeks’ worth of food to match that menu. I personally can only eat the same meal for about 2- 3 days so this is why I prepared two dinner options. But remember do what works for you and just use my experience as a guide.
  2. Don’t forget to purchase your meal prep containers. I would recommend purchasing meal prep containers that are reusable and dishwasher safe.
  3. On Sunday, I prepared my meals, boxed it up and set in the fridge. I was ready for the work week and I promise if you follow these steps you will thank me later.
